Our developers have already found a fix and it will be included in the next plugin update, which is expected to be released shortly. Meanwhile, I would recommend temporary downgrading the Hotel Booking plugin to v. 3.9.8 to have Stripe working.

You may use our nice Checkout Fields add-on, which allows editing existing/adding new fields to the checkout form – I believe this is exactly what you need.
However, those fields will not be displayed in invoice in case the PDF Invoices add-on is used.Regards,

Unfortunately, I was unable to replicate the issue you are referring to. Tried removing the incorrect %check_in_time% variable and save changes. After that add the variable back to the same place and save changes once again. Check whether valid time is output in the customer approved emails after that.

That is correct, there is no option to apply a fee depending on a length of stay, unfortunately. The only way to achieve the desired results is to add a fee to rates directly, as you have mentioned in your previous reply, and adding a notice to your guests know that the fee is included starting from a 3-nights stay.

Unfortunately, there is currently no such possibility within default API integrated to the Hotel Booking plugin. We will take your suggestion in mind though for future plugin releases and might include such functionality .
For now the best option would still be the Payment Request add-on, which works perfectly fine with the described scenario.Regards,
