You may try to hide the default (global) information about check-in and check-out time from the checkout page and email notifications (Accommodation > Seetings > Email Settings). Then you may add personal check-in and check-out times to the description of each accommodation type.

Meanwhile, you may use the Notifier addon to send automated email notifications with price breakdowns in a specific number of days before check-in. For example, you may send a notification with a price breakdown 1 day before the check-in date.
