is there a way that a customer can view their booking without logging into their account (or even creating one for that matter)..
by default, the link takes them to the wp-admin area for edit booking.. which doesn’t seem safe.

If you mean your customer who is the owner of the property, so the application can be used for this purpose https://motopress.com/blog/hotel-booking-mobile-application/
If you ask for a guest, then the details of the booking can be viewed in the email notification or via the View Booking link that brings the guest to the Reservation Received or Booking Confirmed page.
