How to cancel taxes and fees when booking a new reservation manually in the dashboard? I want only to apply taxes and fees for the users booking.

Unfortunately, there is no such option to disable taxes and fees for admin bookings, you may only disable booking rules for manually added bookings.
We will consider your suggestion for future plugin updates though.Best regards,
