Yes, you it is possible to integrate custom payment gateways for Hotel Booking plugin if you have enough coding skills. Unfortunately there is no sample payment gateway yet.

mprm-sample-gateway is an addon for Restaurant menu plugin and can not be used for Hotel Booking.
