The added Service is for “$25/person/night” for adding extra guests to a room. However, the maximum number of guests that should be able to be added is 2. There is a dropdown selector showing that shows 1 thru 4 extra guests to be added. How do I remove 3 and 4 from that list since we only accept up to 2?

The service is applied to guests total capacity, so in case the room accepts 4 guests, there is no way to apply the service to maximum of 2 guests. If you would like to charge extra for additional guests, you should use the Variable Pricing, so the price per night is increased by $25 for 2+ guests. For more details check this article.
